Fresh liver is soaked in cold water to remove blood and debris.
Dry it with kitchen paper and cut into small pieces.
In a separate bowl, beat the egg, mix it with the salt, sugar, baking soda and crushed garlic.
Add the liver pieces to this mixture and let them marinate for about 2 hours (maybe longer).
In a heated pan, fry the diced onion and set aside.
In the same pan, fry the liver, first rolling each piece in flour.
Fry for 3 minutes on each side, then sprinkle the fried onions on top, cover with a lid and let simmer for another 5 minutes.
Serve with a side dish and a fresh salad.
