10 minutes (plus cooking time for beets)
Chill time: at least 2β4 hours (better overnight)
π Ingredients:
8 medium beets, trimmed and scrubbed
1/2 cup apple cider vinegarΒ (or red wine vinegar)
1/2 cup water
1β2 tbsp honeyΒ or maple syrup (adjust to taste)
1/2 tsp salt
1/2 tsp black peppercorns
1/2 tsp mustard seedsΒ (optional)
2 cloves garlic, peeled and smashed (optional)
1 small bay leafΒ (optional)
